#throwbackthursday Wow!! I think I look better now than in my late 20’s! I’m happy with how far I’ve come, but there’s still many journeys ahead…my continuing battle with my random auto immune disease, my moms health, university slowly making me insane and of course the one place i have to be 60 hours a week, work…. I’m taking an IG break, there is really too much going on in my life right now. But I will be back, hopefully in April. I need to prioritise…I’ll miss you IG fam xxxx View high resolution

Did a nice lil run this AM! Ran approx 5K in 25 mins to meet a friend. She wants to learn to run, we did a mix of running n walking for 2.5K for 35 mins. Then I did one last sprint of 1.5 in 10 mins. Felt good to encourage someone else to give themselves a push. She really enjoyed it and commented that “I’m fun and supportive” to be around. Made me feel good ;) Happy Monday everyone! OMG I am amazing!!! Created the tastiest Thai inspired food. Marinade: 2 tablespoons almond butter/paste, 1 tablespoon low sodium Soy sauce, 1 teaspoon organic honey and 1 tablespoon shredded coconut. Chop chicken n throw in marinade for a few hours. Cook on high heat for approx 5 mins. Stir fry whatever veggies you have and serve over rice noodles. Honestly I’m dribbling just typing this! It was sooooo awesome! #eatclean #cleaneats View high resolution

I’m planning on spending all day (until work @4pm) in the library, all my containers are in use (and packed in my bag for the day) or mid dishwasher cycle…..so a baggie meal it is! Classy?! I think so! Made me laugh this morning! #mealprep Anywho, I played with quinoa & spices last night. I ground the quinoa (food processor) and added Italian herbs, garlic & a squeeze of lemon. I dipped organic free range chicken in egg then the quinoa and baked it in the oven. Turned out phenomenal ;) So tasty! Has a nice crunch in the outside that’s full of flavour and moist chicken on the inside, yummmmmmmm! Side note @mission_fit_possible I put 1 tablespoon coconut oil on the tray n heated it in the oven, then placed chicken on, so no sticking baby ;) #beastmode ON in the gym and in University this week ;)) View high resolution
